First fill Bourbon Barrels 1st fill bourbon barrels impart sweet flavours of va- nilla and caramel alongside a creamy texture. Ex-Peated Quarter Casks Our ex-peated casks were previously used to mature heavily peated Islay single malt whisky. Here they are used as a finish, adding a delicate subtle smokiness WHISKY MAKERÕS NOTES NOSE: Crisp and clean with aromas of fresh peach, toffee and vanilla cream alongside floral notes of juniper, wispy smoke and tobacco leaves . PALATE: A bolder palate with a rich, oily and full mouthfeel.Stone fruits and lime zest are joined by crumbled biscuits whilst charcoal and medicinal peat smoke run throughout. Re-charred Oak Casks The selection of American Oak casks were hand charred by BimberÕs on-site coopers to level #4 char Ð also known as ÔAlligator charÕ. The deep charring process caramelised the wood sugars, adds a layer of filtering carbon to the surface of the barrel and influences the whisky by imparting distinctively sweet, rich smooth and fruity flavours into the maturing spirit. _ NOSE: Orchard fruits and spit-roasted pineapple chunks are sweetened with honey, nougat and cookie dough. Oak smoke and wood char float across the nose, whilst cinnamon and pepper spicing offers an enlivening intensity. PALATE: Red apples and ripe pears sit alongside banana bread and pineapple juice. Caramel, butterscotch sauce and split vanilla pods combine with layered pepper and ginger spicing and a characterful note of charred oak. Ex-bourbon Cask #8 A journey through balanced fruit and spice, drawn from an extraordinary single American Oak Ex-bourbon cask. This ex-bourbon cask delivers sweet, rich and fruity flavours which sit perfectly with our light and accessible spirit style whilst offering remarkable maturity. Sherry Cask #42 A beautifully sweet and rich single malt, full matured in a single Ex-Pedro Ximenez sherry cask. Sourced from Spain, this cask was previously utilised in a Jerez Solera for several decades, imparting a delectable selection of bright and rich fruit-forward notes. NOSE: Rich and beautifully sweet with succulent cranberries and redcurrant jelly. Apple pastries and rum-soaked raisins are joined by cinnamon rolls and chocolate gateaux PALATE: Viscous and opulent with nutmeg and anise sprinkled atop of a rich fruit-packed sponge cake. Gingerbread is served with hot chocolate whilst liquorice sits with mentholated oak FINISH: Enduring sweet fresh sherry with fading white pepper and a touch of mint leaf _ 70CL/ 58.1%ABV NO. Virgin Cask #7 An exceptional single malt crafted with passion and matured in a single American virgin oak cask. The oak-forward flavours of this cask add both creaminess and spice resulting in a bold but still highly balanced whisky which ably showcases our distinctive spirit character. NOSE: Soft, warm and welcoming.
