Speyside Single Malt Scotch Whisky Distillery Bottling Unfortunately the Spirit of Speyside Whisky Festival was cancelled this year but GlenAllachie have still released this rather special single cask bottling, which had already been filled specially for the festival. The whisky was distilled in 2006 and matured for 13 years in PX Hogshead cask #6601, only 332 have been filled from cask at an impressive 60.5% vol.

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farmÕs quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky. Distilled from clear wort in the summer of 2006, with a slow distillation regime, very high and narrow cut points we collect the lightest most delicate flavours from our barley malt. This bottling contains whisky from 7 first fill bourbon barrels. Casks 067/2006, 068/2006, 069/2006, 070/2006, 071/2006, 072/2006, 073/2006 which were all filled at the end of our summer season on the 30th September 2006. Bottled exclusively for the USA. TASTING NOTES The nose opens with freshly baked Victoria sponge, curry leaves and cinder toffee, with tinned peaches and warm gorse flower developing with time in the glass. These notes continue onto the palate, but are joined by lemon zest, molten honey on toast, marmalade and vanilla pods, with wood polish and marzipan appearing on the back palate. On the finish, waves of honey and spicy oak linger, with fruit-salad chews appearing after a minute or so. This is an excellent dram for a warm summerÕs day.

Ex-Peated Quarter Casks Our ex-peated casks were previously used to mature heavily peated Islay single malt whisky. Here they are used as a finish, adding a delicate subtle smokiness WHISKY MAKERÕS NOTES NOSE: Crisp and clean with aromas of fresh peach, toffee and vanilla cream alongside floral notes of juniper, wispy smoke and tobacco leaves . PALATE: A bolder palate with a rich, oily and full mouthfeel.Stone fruits and lime zest are joined by crumbled biscuits whilst charcoal and medicinal peat smoke run throughout. The White Oak distillery is perhaps the least known of Japan’ whisky producers. The distillery was founded by in 1888 to produce sake, and because of this, has a legitimate claim of being the country’s oldest whisky producer. In 1919, Eigashima Shuzo obtained a license to make whisky — four years before Yamazaki was built. This White Oak Akashi was matured in a bourbon barrel for 5 years. This is a first fill whisky, if you want to try something truly exotic with only limited number of bottles ever released, then this whisky should be for you!
